This photo is in response to the What The World Eats article that's making the rounds again. Some of my friends and I did a challenge to show our meal plans for the week so we can see what we actually eat. Many of us are gardeners/homesteaders so what we eat changes seasonally, but this is a pretty good representation of how I'm eating now before the harvest starts. Much of my food is dry goods, home canned, or home dehydrated. So if I took something out of a jar for one of the recipes, I pictured the whole jar. I got this recipe from a friend. 7 1/2 cups rolled oats (not instant) 2 cups rye or barley flakes 1 1/3 cups sliced almonds 1/2 cups sesame seeds 1 cup wheat germ 2 cups raisins 1 cup sunflower seeds 1/2 cup pumpkin seeds* 1 1/2 - 2 cups dried fruit Combine oats and flakes. Spread on 2 baking sheets and bake at 350F for 10-15 minutes or until toasted. Let cool. Combine almonds and sesame seeds and bake at 350F for 3 minutes or until toasted. Let cool. Combine all ingredients. I find this very filling. I eat about 1/2 cup in plain yogurt, with a little bit of honey to sweeten. It makes a lot too. I brought some into work, and I plan on freezing some in bags to save for later. I don't like pumpkin seeds so I used peanuts, and for the dried fruit I used cranberries and dehydrated strawberries. YUM!
