As summer heats up The News-Press staff shares their favorite recipes. Name: Cory O'Donell. Position: Digital engagement editor. Recipe: BBQ. 1/2 cup paprika. 1/4 cup brown sugar. 1/4 cup kosher salt. 1/4 cup granulated garlic. 1/4 cup chili powder. Combine ingredients in a bowl and rub on bird until fully coated. Wrap bird in foil and set in refrigerator until time for cooking. This rub makes any bird or beef sing. Name: Pam Staik. Position: Education Reporter. Recipes: Salad and fruit dip. Avocado chopped salad. 1/3 cup black beans. 1/3 cup corn. Handful of dried fruit of choice (I love the pomegranate and berry blends). Juice from a lime. Feta to garnish. Directions: cut up the avocados and tomato into bite-size pieces and toss them in to a bowl with the beans, corn and dried fruit. Squeeze the juice from a lime and let this soak up the goodness. Chop up your spinach and romaine. Mix into the avocado bowl and top with feta. This is our go-to dinner salad year-round – add chicken, tofu, bacon or fish for protein. Sally's fruit-dip heaven. 1 block of cream cheese, brought to room temperature. Directions: whip the cream cheese with the Fluff. Serve with fresh strawberries, cherries and blueberries. This is my friend's (Sally Goldman's) recipe, and it is so delicious I would steal it from my grandma. Name: Amy Williams. Position: Writer. Recipes: Gazpacho and Sangria. • 1/2 red onion. • 1 cucumber, peeled. • 4-6 large tomatoes. • Juice and zest of 1 lemon. • 1 mango, peeled, pitted and cubed. • 2 tablespoons extra-virgin olive oil. • A few pieces of sourdough French bread. • Chopped scallions and sour cream. Put everything except the scallions and sour cream in a blender and liquefy. Chill at least an hour before serving. Garnish with scallions and sour cream. • 2 limes, sliced thin. • 2 small carambolas thinly sliced crosswise. • 1 mango, peeled and cut in chunks. • Juice of 1 passion fruit. • 1 chilled 750-ml bottle dry white wine. • 1 chilled 12-ounce can ginger ale. • 1 chilled 750-ml bottle champagne. Reserve some of the lime and carambola slices for garnish. In a large pitcher, stir together the white wine, the mango, the passion fruit juice and the remaining lime and carambola slices. The sangria may be prepared up to this point one day in advance and kept covered and chilled. Just before serving, stir in the ginger ale, the champagne and ice cubes, and serve the sangria garnished with the reserved lime and carambola slices. Name: Mark Bickel. Amazhing Chef food processor - Global Shop Direct Update 2008.05.14: We tried it last night with avocado smoothies and chopping up some garlic and preserved lemon to make a fish marinade and it passed quite happily. The results was a slightly chunky marinade, probably because there wasn't enough to fill the blades, confirming my theory that good blenders have conical bottoms to cause the contents to collect close to the blade. The Amazing Chef performed quite well with the cauliflower puree that filled the capsule to three quarters full. We even had a few cubes of ice in the avocado smoothie and it managed to crush it all, no choking or sputtering. :) The cups/capsules are polycarbonte, I think. Microwave and dishwasher safe. A quick rinse sorted them out mostly. The screw on blades is a bit annoying though. It takes more effort than...

Homemade black bean and chickpea hummus I
Homemade black bean and chickpea hummus I
The hummus is homemade, my first attempt at making it. I took two different recipes I found and combined bits of each of them to come up with my own. The only thing I would do differently next time is I would probably blend it for longer to make it really smooth. Recipe for Black Bean and Chickpea (Garbanzo Bean) Hummus 1 can chickpeas (garbanzo beans,) drained and rinsed 1 can black beans, drained and rinsed 1 1/2 Tbs. tahini (sesame paste) 1/2 cup extra virgin olive oil 1/4 cup water 1 tsp. toasted sesame oil 1 1/2 tsp. kosher salt 15 grinds of black pepper 1 tsp. allspice 2 cloves of garlic (fairly large cloves) 2 1/2 Tbs. flat leaf parsley, roughly chopped (no stems) juice from 1/2 a lemon juice from 1 lime Put all the ingredients in the food processor, and mix until smooth. A blender would work as well, it will just take a bit longer, and you'll have to stir the ingredients a bit to get it all blended properly.
