Color your way to better nutrition - Refresh - The Buffalo News - Buffalo News

A very unscientific survey of six girls at a Nardin Academy summer cooking class this week came up with the following raw data:. • Tomatoes, peppers and potatoes are more popular than eggplant, asparagus and kale. • Broccoli, spinach and squash have grown in popularity over the last generation. • Today’s parents are a lot more likely to bring kids into the kitchen for planning, prep and cooking than was the case a generation or two ago, when mom tended to meal duties alone. “We end up making a lot of the dinner,” 10-year-old Kate Saccone said of herself and her brother, Christopher, 11. Kate was quizzed along with Shea Hartman, also 10, Maddy Forton, 9, and Tess Shanahan and Abby Gioia, both 11. All live in the... The group was part of a larger contingent to make red, green and orange smoothies in the Nardin Dining Hall with help from school chef Julie Levin. “Healthy foods don’t have to be a raw mix of only vegetables. There’s a lot you can do to make a version of comfort food that is still appealing and flavorful,” said Levin, who during the last two years has helped turn school meals at her high school alma mater into a colorful mix of scratch-cooked foods –... The coming months will be the ideal time for families across the region to take a similar tack in their own kitchens and backyard barbecue spaces, Levin said. She, organic farmer Dan Roelofs of Arden Farm outside East Aurora, and Trocaire College Nutrition and Dietetics Department Director Nicole Klem joined forces in recent days to put together healthful recipes – broken down by color – you’ll want to... “More variety, more color, more diversity means more nutrition,” Klem said. It’s like taking the world’s best multivitamin. Cherry Tomato and Pearl Mozzarella Salad. Has a fun, visually appealing gumball-like texture, with no cutting or cooking needed, Levin said. Prep time: 15 minutes. Total time: 30 minutes. Combine oil and basil in a bowl. Add the mozzarella and season to taste with salt and pepper. Cover and let marinate for 30 minutes. Add tomatoes and lemon juice or vinegar. Season to taste with more salt and pepper as needed. One Pan Spiralized “Spaghetti” with Tomato Sauce. Fun texture and prep, as kids can spiralize and peel squash and carrots, and shave or grate Parmesan. “Quick prep and cleanup as it eliminates the no-pan-left-behind syndrome of complicated recipes,” Levin said. “Zucchini and squash are hopping right now,” said Klem. Prep time: 15 minutes. Total time: 30 minutes. In a large saute pan bring 2 cups of water to a boil and add the spiralized carrots. After 2 minutes, add the spiralized yellow squash and continue to cook for 3 more minutes. Remove from heat and drain the blanched “spaghetti. In the same large saute pan, heat olive oil and add garlic and onion when hot. Sweat the aromatics for 5 minutes until soft, but, not caramelized. Add the chopped tomato, season with salt and pepper to taste and cook for 5 minutes. Return the vegetable “spaghetti” to the pan and toss with fresh tomato sauce for a few more minutes until heated through. Season to taste. Serve with freshly torn basil and Parmesan cheese shavings – and also with Better Meatballs (see recipe on Page 11). BLUE/PURPLE. Easy, kid-friendly blender recipe adds spinach into diet in a colorful, palatable way, Levin said. Prep time: 10 minutes. Total time: 10 minutes. This recipe emphasizes color and preserves the fresh crunchy texture kids enjoy, Levin said, and can be paired with a healthy ranch dip below to encourage healthy snacking. Prep time: 10 minutes. Total time: 10 minutes. Bring a large pot of water to boiling. Fill a large bowl with ice water. Working in batches, carefully place the beans into the boiling water and cook until the color is set and the beans remain toothsome. 2 minutes for. Source: www.buffalonews.com

Peanut Butter Mousse Cake
Peanut Butter Mousse Cake
I'm in a major peanut butter phase. I just can't get enough... This mousse set up really well, but I think I put the ganache on while it was still too warm because it seems to to damaged the mousse a little. Something to remember for next time. The base layer here is a kind of blondie cake made with grain coffee, which gives it a really interesting and nice flavor. I used an adapted version of the recipe from the Voluptuous Vegan cookbook. oven at 350 1/2 c ww pastry flour 1/ c unbleached all purpose or pastry flour 1/2 t baking powder 1/4 c dry sweetener (recipe calls for Sucanat, I used Florida Crystals) 1/2 c grain coffee (I used Teeccino Java) 1/ c oil (I used applesauce) 1/ c maple syrup 1/4 soy milk 2 t vanilla extract 2 T tahini 1 T peanut butter 1/2 t salt combine dry ingredients and mix combine wet ingredients and mix then put it all together in a springform pan and bake for (recipe says) 20 mins., it took more like 30 for me and I know my oven was at temp. for...

Chosen for EXPLORE, September 3, 2011! (Disclaimer: I am not a scientist or engineer, as the following description makes obvious!) The pan and its top, seen here, is the device we use for simple "hot-water-bath" canning (fruits, rhubarb and tomatoes and some pickles)--the high acid foods. The USDA and the home extension office in the USA do not officially approve this device, stating that 'not enough research has yet been carried out to know if it is safe'. [Do not confuse this device with a "pressure canner" which is a large pressure cooker that locks tight and raises pressure within, subjecting the food to temperatures well above boiling (and which is NECESSARY for preserving all foods other than those named above--most vegetables, meats, soups, etc.). ] ALWAYS FOLLOW THE ADVICE GIVEN BY YOUR RECIPE FOR USING THE CORRECT PROCESSOR, simple water-bath (as here) or locking pressure canner. The device seen here uses simple steam to "boil" the cans and...

316/365 - Maple-Bourbon Pumpkin Pie
316/365 - Maple-Bourbon Pumpkin Pie
As we do at least once or twice every football season, we had my grandmother over today, to watch this afternoon's nail-biter of a Patriots game and to have dinner. Nothing terribly fancy, just a meatloaf, mashed potato, veg, and dessert. Yes, meatloaf. I like meatloaf. And they served it in the cafeteria at the office this week, but with rice on the side and not mashed potatoes (which is just wrong), so I had a craving. Thing Two, my usual "sous chef", decided that we should make a pumpkin pie for dessert, so this is what I came up with. It's a basic pumpkin pie, but with some of the sugar swapped out for maple syrup and vanilla traded for some bourbon. Topped it with some brown sugar whipped cream, and got a few shots in (under some lights I had set up in advance for the purpose) before setting it on the table. I like composition here, but something throws me a bit about it. I think it might be the runner not completely covering the butcher block in the upper corners,...
