That’s the way with tea. A tea pairing session at TWG Tea in Pavilion KL proved it can be adapted to suit any mood. Feeling coquettish. Try Geisha Blossom, a green tea with peach and safflower. In the mood for love. Try Amour de The, a black darjeeling with rose petals and vanilla. Craving for chocolate. Try the Chocolate Earl Grey Tea with bergamot and dark chocolate. We will stick to the traditional tea. Black Tea 1837 is the signature house label. The year marks the first time tea was traded by the Singapore Chinese Chamber of Commerce. If you are feeling rich, invite fortune into your life with the Yellow Gold Tea Buds. It is RM423. 50 a pot. There are gold flakes in it. About one pot is sold every three years. And no, the tea boutique has no worries about getting robbed. “We have 450 varieties of tea on sale. Looking for this tea alone will take quite a while. And sorting out the gold flakes would be like looking for a very fine needle in a massive haystack,” said marketing manager Marcia Yim. For a food and tea pairing, Yim started the session with an Emperor Sencha, a green tea with scents of seaweed. Mild with a slight briny note, it had a golden finish. The tea did not overpower but served to offset the sweetness. We had the Tibetian Chicken Salad next. It was named so as there was Tibetan Secret Tea in the dressing. This is a black tea infused with sweet fruits. One dominating element here was the black pepper to give the roast chicken breast some robustness. That bit of sweetness in the salad dressing blended with the black pepper to give the dish a savoury touch. A Pai Mu Tan, which is white tea infused with white blossoms, neutralised this savouriness and cleaned the palate. It was poured from a stylish RM3,571 Grand Summer tea set. This readied us for the Seafood Linguini which came with a crowd of clams, calamari and prawns. A Lung Ching, which is green tea with hints of fragrant wood and a golden aftertaste escorted this pasta. The pasta was nice. So was the tea. But what stole the show was a gold plated teapot. Shaped like a camel with its grunting herder forming the handle, it carried a RM12,000 price tag. This is a grand construction of roast chicken, poached prawns, smoked salmon and a lathering of emmenthal cheese. It was paired with an 1837 Black Tea, poured forth from the spout of a blue Tsarina tea set. The tea was an instant pick-me-up. A short break prompted a discussion on how tea can play a part in the wellness aspect. Jasmine Tea for a good night’s rest and red teas are recommended for pregnant women for their high Vitamin C content. This may be one reason why we were served red teas from South Africa, all iced, to complement dessert and for a refreshing end. There was Jade of Africa with sunflower and strawberries. Another one, Red of Africa had the citrus flavour of lemon. The third, Eternal Summer had an infusion of hibiscus, berries and peaches. Finally, coffee lovers should take note that there is something for them even in this tea salon. It is called No 12 and has dry coconut, coffee beans and of course, black tea. The best way to learn about other ethnic groups is to experience that culture directly. Unfortunately, to travel to foreign places isn't often possible. Giving students the opportunity to learn about and enjoy ethnic customs and holidays through food is a great solution. This new edition of Holidays of the World Cookbook for Students provides detailed information about the holidays of nations around the world and presents a multitude of selected recipes that are ideal for each celebration. The recipes appear with each country entry, and the countries are arranged in alphabetical order within each region: Africa, Asia and the South Pacific, the Caribbean, Europe, Latin America, the Middle East, and North America. With recipes especially adapted for preparation by student chefs, this...
